Create Tasty, Healthy Sauerkraut
At Home Cooking Class

creating a delicious dish you can use for weeks.
Join Ms. Tiffany on her journey of creating sauerkraut with local and seasonal vegetables.

Sauerkraut is essentially fermented cabbage which is probiotic rich and helps promote a healthy gut!
Many different kinds of sauerkrauts you can have fun making.
For this sauerkraut, I will be using
carrots, cabbage, turmeric, garlic, and beets.

Grab your ingredients:

                    1. 8 cups red or green cabbage (finely grated)
                    2. 1 1/2 – 2 tsp sea salt (plus more to taste)
                    3. 1 small beet (finely shredded)
                    4. 3 whole carrots (finely shredded)
                    5. 3 Tbsp fresh turmeric (shredded)
                    6. 4 cloves garlic (finely minced)
                      **** You can add Ginger too: ****
                    7. 3 Tbsp fresh ginger (shredded / grated)

Directions:

                    1. Shred your cabbage and put into a glass or stainless steel bowl.
                    2. Add 1 1/2 tsp of salt onto the cabbage. Massage the salt into your cabbage with clean hands for 5 minutes. Your cabbage will release fluid and decrease in volume.
                    3. Shred your carrots and beets and combine in your bowl.
                    4. Mince your garlic, turmeric, and ginger.
                    5. Combine all the ingredients and mix together.
                    6. Put all the ingredients into your sterilized ball jar. The fluid from the massaging should cover the kraut.
                    7. Now let your kraut sit for 7-14 days. Keep away from direct sunlight.
                    8. If you have a KrautSource unit, see photo below, put the unit ontop of the jar. Leave on the counter. Check every few days that there is fluid in the moat. If you don’t have a KrautSource unit, open up your jar daily to release the gas.
